A deliciously simple “fancy” meal.

That was our supper last night. It was definitely a hit with Travis and I. Sam enjoyed the fish but not so much the salsa (other than the mangoes. HA!) I don’t recall having ever grilled fish before. However, I will definitely do it again! So easy and quick AND no fish smell in the house! YAY!!

If you want to make it, here is what you need to gather up:
1/2 lb tilapia filets (ours were actually lemon pepper seasoned on clearance at the meat counter)
1 mango, diced
2 Tbsp diced purple onion
2 Tbsp chopped cilantro
Juice of 1 lime

Obviously, you just grill the fish. The other 4 ingredients just get combined together and thrown into the fridge for a bit to get it nice and cold. Once your fish is done, top it with the salsa and enjoy!

(If you are wondering about our other side dishes- it was grilled sweet potatoes & one of those frozen steamable bag of brown rice with carrots and broccoli in it.)
