I found this recipe online at and thought I would try it. It made a sweet snack that required no baking. Therefore, I could easily and quickly throw it together. I made it this past Sunday afternoon and took it to the WF fireworks show to share with our friends- it was a huge success! We still had plenty leftover so we also took it to RISK night on Monday- it was a success there as well.

If you want to make some, gather the following ingredients:
1 stick of butter
1/3 cup brown sugar (I used light)
1 tsp of vanilla extract (I used almond extract instead)
8 oz cream cheese (I used that Neufaschtel (or however it is spelled) stuff that is supposedly healthier)
1/2 cup powdered sugar
3/4 cup semisweet mini chocolate chips

Then, in a small saucepan melt the butter and thoroughly dissolve the brown sugar in it. Once it is completely melted/dissolved, stir in the vanilla/almond extract. Then set aside and allow this to cool completely.

In a mixer, beat the cream cheese and powdered sugar for a minute or two.

Once the butter/sugar/extract mix has cooled completely, slowly stir it into the cream cheese/sugar mixture.

Beat again for a minute or two.

Stir in the chocolate chips.

Put in a container and refrigerate until you are ready to eat it.
