In an attempt to get back into a regular blogging “groove”, I am going to try out posting our weekly menu and follow it up on Sunday”ish” with a recap of successes and failures. So, if you want to know what we are eating, here it is:

FYI- “L”= lunch and “S”= supper and “GF”= gluten-free (which is kind of redundant since EVERYTHING will be GF)
Monday:
L- GF Lo Mein
S- Baked Eggplant Parmesan

Tuesday:
L- Lo Mein and BEP leftovers
S- Welcome to Moe’s!!!!

Wednesday:
L- Lo Mein leftovers (this should finish it out)
S- Lemon Chicken w/ brown rice

Thursday:
L- Lemon Chicken leftovers or Sandwiches
S- GF Deep Dish Chicago Pizza (ham and cheese) & veggies

Friday:
L- Pizza leftovers
S- Meatloaf Muffins & hashbrowns

Saturday:
L- Stovetop Mac & Cheese (my first attempt at “GFing” a non-GF recipe)
S- Spaghetti & Veggies

Sunday:
L- Meatloaf Muffin leftovers
S- Wendy’s!!
