Other than going to Natchitoches, my birthday was fairly low-key. That is because my “cake” was actually in Mississippi! A gluten free bakery, The Peacebaker, recently opened in Metairie and they make King Cakes! Since my birthday always falls during Mardi Gras, I love having King Cake as my birthday cake. Before celiac, it was easy to find my birthday cake- I either made one via an AWESOME bread machine recipe, mail ordered one, or picked one up. However, finding a gluten free King Cake has been a bit difficult- until now.

It was amazingly moist and delicious. The really awesome thing is that the bakery recommends NOT refrigerating it because it has a long shelf life due to their flour blend. This meant, I never had to deal with nuking cake and could just slice little pieces whenever. I will DEFINITELY get another cake from them again. Travis even liked it and he is NOT a fan of King Cakes. It is A.M.A.Z.I.N.G!

Carb Menu

This week, I am trying to keep up with my carbs and follow the gestational diabetes diet. I am going to stick to this diet until my next OB appointment and then I will evaluate from there. So, I used my dry erase menu frame to help me keep track of how much and when to eat my carbs.

The Hobbit… finally!

There is no hiding that fact that Travis and I are big “Lord of the Rings” fans. (Um, Samwise is part of the reason why our son is named Sam… that and Samuel from the Bible, of course)

So, one of the first things we did upon arrival in Ellenboro is utilize the babysitters, I mean, grandparents, and go see “The Hobbit” in theater. We decided to make a morning of it and so we started by going to Denny’s and eating a Hobbit breakfast.

They were having Hobbit themed breakfasts and if you ordered one, you got two packs of collector cards (think baseball cards.) It was kind of funny but the coupons in the packs were quite nice- free drinks and 20% off meals were the main ones we got.

After breakfast, we headed to the theater. The movie was great! I am already looking forward to part 2 coming out- I think it is supposed to be out around Christmas next year. I guess that means we will be looking for babysitters again…

Thanksgiving in CENLA

Today, we celebrated Thanksgiving with some friends. It was amazing. We have been SO BLESSED by our circle of friends that God has given us here. We didn’t travel for Thanksgiving this year and so we got together with some friends and had a gluten free Thanksgiving!!! Blessed beyond measure!! They all have kids that Sam LOVES to play with so he was perfectly happy playing with all the kids and we were happy socializing with all the parents. There were 7 kids (6 girls, 1 boy) and 3 pregnant mommas (expecting 1 boy, 1 girl, and 1 “we don’t know yet”) and so we realized that Thanksgiving next year is going to FULL of kiddos and I am already excited!!!! I did manage to snap a few pics during all the fun chaos though.

Natchez, MS

After we left the Jackson Zoo on our return trip home, we also stopped in Natchez, MS. We’ve always heard it is a beautiful area and that we needed to visit. Well, we will DEFINITELY be going back. It is only about an hour from us and is situated on a bluff overlooking the Mississippi River. Gorgeous!

We used supper as our excuse to stop in Natchez and it definitely didn’t disappoint. It took a bit to find a place open since it was a Sunday night but we definitely scored when we stopped at this place…

The food was amazing. They were also very helpful with my “slight” gluten problem. I ordered a chef salad with grilled catfish that also came with some fruit. It was super yummy!

We really liked Natchez and will definitely go back. We have some friends who live there so hopefully the next time we go over we can give them enough warning and visit. 🙂

Travis’ 35th birthday!

We had fun celebrating Travis’ birthday. His birthday was actually yesterday but because of a VBS meeting at church, we celebrated it tonight. I finally found a GF cornbread mix that all of us love and so for his birthday, I made him his favorite meal- pintos and cornbread. Here is how the birthday boy preferred to eat his…

Then, after supper, it was cake time. He wanted cheesecake and so I found him a special one that was just for him! I stuck the candles in it to show that he is 35 but, I couldn’t find any matches/lighters/etc. anywhere in this house. So, I got high tech and downloaded an app to blow out candles. Yup, there really is an app for that!!

Sam wanted to help SOOO bad so he carried his cake to him and sung Happy Birthday. I made a movie. If you watch the movie, you can see Travis “blowing out his candles” on his phone too. Sam LOVES this app and keeps finding our ages and blowing out our candles. It is hilarious.

By myself in New Orleans…

The Friday that we were in New Orleans last week, Travis was in meetings from 7:30 am – 9:00 pm. Needless to say, I had a lot of hours to entertain myself in the big city of NOLA. I thought of TONS that I could do but, I really ran a couple of errands that morning, picked up lunch/supper for myself, and hung out in the hotel. It was VERY relaxing. I did take pictures throughout the day so I could blog about my activities. HA! 🙂

The first thing I did was go to the Aveda Institute and get my hair cut. This is an Aveda school so you get a “designer” haircut for $15-18. This was how we would always get our hair cut when we lived there. I love it! We have recently discovered that there is an hair styling school up here in Pineville so the next time I am due a haircut, I will try them out.

After Aveda, I walked across the street (side street- not a busy street) and picked up groceries that I have yet to find in Cenla- bulk foods and special gluten-free yummies. I took my time and enjoyed my leisurely stroll through Whole Foods- I spent almost 2 hours in there! HA! When I got back to the hotel, I took a picture of my “loot.”

In the top of the picture above: approximately 2 pounds each of dried beans (kidney, pinto, and black), rice (brown), and quinoa. In the bottom: the yummies- quinoa mac and cheese, hamburger buns, cereal, cinnamon rolls (we had them this morning- GAG!), and a butterscotch blondie. I figured I could splurge on some treats since none of these items can be found up where we live (except the quinoi mac and cheese- WF had it on sale so I grabbed the last two boxes they had.)

Then, I headed back towards the neighborhood where we lived just prior to Katrina, Old Metairie, to try another GF pizza joint- Naked Pizza. It is carry-out only so I ordered my medium pizza (the only size you can get as GF) and then went back to the hotel for a picnic. I ordered a ham, pineapple, and mushroom pizza. It was good- it wasn’t Mark Twain good though. This one did have a cardboard aftertaste. However, I don’t know when I will have another pizza I don’t have to make myself so I am not complaining. 🙂

As I was finishing up my lunch and organizing my WF loot, I heard the Blue Angels flying overhead so I ran across the street and took pictures. I have already blogged about that so if you just keep reading, you will come to that post. Once they stopped practicing, I went back to the hotel and started uploading pictures, attempted to bring the blog up-to-date, and watched some craft shows on TV- all at the same time. HA!

Supper time arrived, and I ate the other part of my pizza from lunch. Then I read some books on my Kindle and watched more TV while I waited on Travis to get back in. FINALLY, he arrived and we headed downstairs to go with the group down to the French Quarter to eat at Cafe Du Monde. The two guys leading the study Travis was participating in had never been. WOO HOO! Free trip to the quarter! I was excited.

As mentioned in my post about the Blue Angels, it was Navy Week in NOLA. As we were leaving, we took the “long way” back to the car and got as close as we could to the Naval Destroyer that was docked. In the daytime, civilians could board but not at night.

When we got back to the hotel, we just relaxed and went to bed. We had a fun “date” planned for the next day- a visit to an alligator ranch!

Spring Break Day 1

Today was the first day of Travis’ Spring Break- if you don’t count Good Friday, which I don’t. He would get that day off anyway since he works for a Baptist college.

We “slept in” and got up around 8:30 to cook breakfast. I found a recipe for GF lemon cornmeal pancakes and so I thought I would try them. They were pretty yummy. The texture is different from regular pancakes but these guys were FILLING and delicious.

After breakfast, we decided to go to the zoo. Yes, we went to the zoo on Saturday but since we have season passes, we can go whenever and it not cost anything- other than our little train tickets. NICE! We had a great time as usual. Here is a collage of the animals we saw…

First, the HUGE alligator was able to be seen from a window under water. I like this picture because it looks like I was dumb enough to get in the water with the alligator. Thankfully, I had a thick piece of plexiglass between me and the bull gator.

Also, I was like a kid in a candy store with the porcupine. They are never doing anything when we visit but today, one of them kept moving around (but quickly getting in the log when I would get near) and he was “grooming” himself. I finally got a picture where you can see its face…

Again, we found a “new to us” animal. It is crazy to discover all these hiding places in the zoo. 🙂 Here is a scarlet macaw (who was difficult to photograph with my phone because he was super active)…

We tried to eat lunch at Sam’s favorite little sandwich shop- McAlister’s Deli but they were SWAMPED with people so we ended up at Chick-Fil-A at the nearby mall. It was still good but not anything to write home about.

After nap time, I cooked supper- a Mexican hamburger helper-type meal from scratch. It was delicious. However, for the second time in the last week, I’ve gotten “glutened” by something in our kitchen. I really need to figure out what it is because this is misery. 😦 After supper, we ate some yummy yogurt in town and then walked around Kmart and a grocery store. I thought the walking would help me feel better- and it did for a little while. 😦

When we came home, we played Chutes & Ladders. Since I have gotten glutened, the top of my stomach is rock hard right now. It is crazy. Anyway, I walked into the dining room and told Travis to feel my stomach. He made a comment about it feeling like a six-pack. Sam said he wanted to feel. He pushed on my belly and then said “Wow! It feels like a six pack… of gummies!”

Gee, thanks… 😦

After the game, we played a little “Suess Band” on the iPad. I made a movie of Travis playing it. It is like a kiddy version of guitar hero. It makes me laugh. You can touch different parts of the horn to change its shape/sound and as the colors fall down, you have to touch the corresponding key below to play the song. Check out the video to learn more…

I love being “functional” and “crafty”

I’ve been working/researching a way to organize my recipes that will ease the menu planning process and not kill a rainforest in the process. I am a bit OCD about inputting all recipes into my YummySoup software on my iMac. It is very handy. However, when the computer is in the end of the house farthest from the kitchen, it does me no good to have the recipes on my computer. HA! Enter a fun feature of YummySoup- “print” function. Yup, I’ve been printing to 8.5×11 paper each time I have needed a recipe. Yup, that is a lot of trees slaughtered. Yup, I figured out a better way this past week and I am quite proud of myself. I still used the “print” function but I chose to print 4×6 photos to my desktop.

It was kind of funny to see a little over 100 files on my desktop while I was working on this but it is gone and peace and tranquility reign supreme on the desktop again. Anyway, Snapfish was doing a special last week where you could get 100 prints delivered to your door for $5. I took them up on their offer (and added Easter “cards” and “hey, we’ve moved” cards to the bundle as well for a grand total of 169 photos.)

They were supposed to have arrived in the mail today but I received a pleasant surprise when they showed up a day early! WOO HOO!! After Sam went to bed last night, I sorted the recipes into piles to see how many “albums” I would need- 12! After his nap today, Sam and I went to good ol’ Wally World and picked up 12 brag books and a photo “flip” album (not quite sure what it is really called) along with some trash bags and buddy fruit (his “prize” for not performing a “blast off” or “rapido” while in Wal-Mart.) After supper, I assembled by “cookbooks”…

Currently, as you can tell, I just labeled the front of each album with a sharpie. I have dreams of designing something but I need to make sure these are the categories I want to stick with first.
Here is what I have:
Entrees (each has its own album): vegetarian/fish, mexican, chinese, crock pot, favorite chicken, favorite beef, favorite pork, pizza
Sides
Desserts & Snacks
Breakfasts
Sauces, Mixes, Cream of ____s

None of the albums are full so I have room to “grow” while keeping it easy to locate what I am looking for- especially the entrees…it should be much easier to plan based on sales ads now. 🙂 I also like that since I bought 12 brag books, I was able to bring home the display box and so that keeps them together nicely. 🙂

Tonight, after Sam went to bed, I filed the upcoming menu in the “flip” photo album.

Each recipe gets a different page and they are filed in the order in which I plan to cook them. If a recipe has more than 1 “picture” (page) to go with it, then they each get their own page in the flip album. That way, as I am cooking, I can just flip the page to get to continue following the directions. Pretty smart thinking on my part- or so I think. 🙂

I definitely will be covering the box in fabric/paper sometime or another. I am just not in a huge rush to do that yet.

Now, as I plan our weekly menu, I can easily gather the recipes and be done with it for the week. Also, as I try out new recipes, I will just enter them into my computer and print a grayscale 4×6 draft to insert in the flip album. If it is a success and gets voted into the collection, then a simple upload to a photo printing site is all I have to do to permanently add it to my collection. 🙂
